You don't need the cheese!
Top with:
sauteed onions
olives
artichoke hearts
sauteed green peppers
pineapple
veggie canadian bacon
tomato sauce or
pesto (fresh or pre-diced garlic, fresh chopped basil, olive oil, salt)

Queen Margerita Pizza:
Make (or buy a frozen) a yeast pizza dough.
Cover with a layer of pesto sauce. (For a recipe, see http://www,allrecipes.com) Then, strips of mozzarella goat cheese, some Parmesan, and thinly sliced Roma tomatoes. It is wonderful (and the colors of the Italian flag)

I like pesto. You can make your own with basil, olive oil, parmesan cheese, garlic, and pine nuts, or buy it in at tub in the refrigerated section. I like to spread a thin layer of pesto on a refrigerator crust, then add the mozzarella, fresh tomatoes, onions, black olives, and fresh garlic. Top with course sea salt and cracked black pepper.
