I know beignets are mostly in new orleans but we make them all the time here in central Louisiana. I love boudin!!!! on saturdays my dad would always pick up donuts and boudin for breakfast....its the best thing!! If you are cajun you will now what I am talking about...these are some of the best foods...

Boudin!!
Here in South Louisiana people pick up boudin for any occasion. On their way to work, before going grocery shopping, when you just need a snack, for tailgate parties...... and my daughter went to a bike-a-thon, and her friend's dad picked them up a link of boudin and a coke (instead of just water!!).
Our favorite is from Don's Specialty meats in Carencro, the great thing is that you can get it in just about any gas station or meat market around here! And of course, fried boudin balls are great too!

I was only to New Orleans once, about a year before Katrina. I absolutely fell in love with beignets from Cafe Du Monde. Does anyone know if it's still there?

it's worth flying to New Orleans to get real, properly cooked Beignets.
Especially at Le Monde ( or is it Tout Le Monde?)
Beignets & coffee with chicory at midnight with a light rain falling. PERFECT !

beignets from Cafe Du Monde. I miss them. and i miss crawfish, shrimp po' boys, hot sausage on french, pralines, BigShot pineapple, daquiri's, real french bread, yaki meat. shoot!
Not really into boudin but it smells good and if i'm hungry its gone.
