Rarely are Oriental style foods marinated except for short periods of time. The secret to the tenderness of the meat is the cut. The meat is prepared in thin slices cut across the grain, seasoned and cooked quickly.

Imagine you have a 2 x 4 and if you cut down the length, you would have long splintery pieces that would be difficult to break. However, if you were to cut thin slices across the board, these could easily be broken apart. This same principle applies to slicing meats for stir fry.

Tender? The meat I get is usually dry and rough but that's because the Chinese food places use frozen meat for all their dishes ... despite the fact that some people think its cat meat

That's a No No! You never ask about meat in a Chinese restaurant, why it so tender? where is it from? or what was the specie of animal involved in that epicurean delight? Just pull out the chop sticks and enjoy.

because they pre cut the meat in slices before and allows time to tenderize...everything is set up in bins...so when you order its all pre cut and ready to put in wok....
