i'm a vegetarian and i'm starving?

Veggie, Almond & Feta Sandwich or Salad
2 small zucchini, diced
2 Roma tomatoes, diced
10 chopped kalamata olives
1 red or green bell pepper, diced
1/2 onion, preferably sweet Vidalia onion, diced
1/2 cucumber, diced
1/3 cup crumbled feta cheese
1/4 cup sliced toasted almonds
2 T fresh basil, chiffonade
1 tsp. fresh thyme
1/8 cup olive oil
1/8 cup balsamic vinegar
salt and fresh ground pepper to taste
rolls, pita or bread of choice for sandwiches
Chop all vegetables in a bowl. Crumble feta into bowl, add almonds and herbs and mix. Mix together oil and vinegar, pour over vegetable mixture and toss well. Serve as is as a salad or stuff in a pita, roll or other bread for a delicious sandwich.

Put some rice on the boil.
Add a little oil in a pan and add chopped onions, one garlic clove chopped and some chopped mushrooms.
Turn your oven on.
Now get one pepper and one big tomato. Chop the tops off and keep to one side as a lid. hollow out the tomato add this to the onions and mushrooms. Hollow out the pepper and discard the innards.
When the rice has cooked, drain and add to the mushroom mix - stir then use to stuff the pepper and tomato. Place the lids back on drizzle in olive oil, add salt and pepper and roast in the oven for about 15 - 20 Min's.

Beans on toast. Very nice - and quick to prepare which is always important where lunch is concerned.

My favorite is a black bean burger on an onion bun with a slice of tomatoe, red onion and cheese (optional)...yummmmmm
