How To.....BBQ A Hedgehog
1) Buy a large live Hedgehog from any good retail store (Tesco’s are currently offering 2 for 1)
2) Light the BBQ and leave until it reaches maximum temperature
3) Pluck the Hedgehog using a pair of good Tweezers.
Remember to keep the Hedgehog alive at this point for freshness
4) Slice of all four feet off using a sharp knife (removing eyes is optional)
5) Baste hedgehog in a good BBQ sauce and marinate for 20 minutes
6) The plucked hedgehog may now be a little chilly so stick him on the BBQ to warm him up (It may squeal at this point)
7) Turn every 5 minutes for 25 minutes or until black and crispy.
8) Serve with a side salad and some cheese and pineapple on hedgehog spikes.

Was going to answer but Alex got there first. Romanies covered the dead animal in mud and baked it on an open fire. When you crack open the clay, the prickles come off. Eating a hedgehog which is dead when you find it may not be such a good idea. They are said to carry TB and other nasties. Whatever the RSPCA says. find one that is still alive. I don't know about the UK, but in Switzerland this would be illegal, since hedgehogs are a protected species.

wouldn't eat it u don't know what it died of leave it to go solid and use it as a hairbrush
then again u could i suppose slice it real thin and fry it the fat should kill any germs i guess and see if u can make a better hedgehog crisp cos the ones they first bought out where foul!! lol

Hedgehog kebabs are nice. Use the spikes instead of kebab sticks, a cheap, economic alternative.
If you skin the hedgehog, the spines come off with it, like fur.

well you need to take out the inners,remove the legs cover in thick mud about 1inch thick,put into oven on gas 7 for about 2 hours,when you remove the dryed mud spikes and the skin will come off at the same time,season with salt and pepper tastes like chicken.

Smother it in clay then roast in an oven for abou 30 - 45 mins.
Take out of oven and remove clay(spines should come away too) and eat with roast pots and mixed veg.
Tastes a bit like chicken!

i wouldnt eat any dead animal i found for hygiene reasons but if u must...
best way is to just put it over an open fire, let it cook slowly, u will find the spikes will just peel off with the skin after its cooked, no different to cooking and eating an echidna

you'd need to mince it to brak down the spines to a consumable size. I'd then mix in some onion and tabasco and pan fry in a light oil to med rare.. Serve with rasberry jus and potatoe escallope.
