Sesame Chicken

1/4 c Sesame seeds
2 tb Sesame oil
2 tb Butter
1 sm Onion; finely chopped
1 tb Cracked or bulgur wheat
.. (heaping)
Salt and pepper
1 Egg
1 tb Chopped parsley
2 1/4 lb Chicken

Brown 1/8 cup sesame seeds in frying pan without
any fat, then add 1 tablespoon each of butter and
oil. Add onion and cracked wheat or bulgur; sauté
for 5 minutes, stirring frequently. Remove pan
from heat and stir in pinch of salt and pepper.
Cool slightly, then mix in egg and parsley.

Preheat oven to 425°.

Stuff chicken with wheat mixture and sew up. Mix
remaining sesame seeds with salt and pepper; coat
chicken with this mixture, rubbing it in well.
Heat remaining oil and butter, brush chicken with
half. Place, breast side down, in roasting pan.
Roast 25 minutes, turn over and roast another 25
minutes. Brush with butter-oil mixture and roast
10-15 minutes. Baste several times with the
cooking juices. Turn oven off and let rest 10
minutes before serving.

Makes 4 servings.

Ingredients
3 Whole boneless chicken breasts

Marinade
2 tablespoons light soy sauce
1 tablespoon cooking wine or dry sherry
a few drops of sesame oil
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons water
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons brown sugar
1 teaspoon vegetable oil
Sauce
1 cup water
2 heaping tablespoons hoisin sauce
2 tablespoons brown sugar
4 teaspoons dark soy sauce
2 teaspoons chili paste (or less depending on taste)
2 teaspoons vegetable oil
2 garlic cloves, minced
2 tablespoons cornstarch
1 green onion, thinly sliced


2 tablespoons toasted sesame seeds

3 1/2 - 4 cups peanut oil for deep-frying
Directions:
Cut the chicken into small, approximately 1-inch cubes. Add the marinade ingredients and marinate the chicken for 20 minutes.
While the chicken is marinating, prepare the sauce. Mix together all of the sauce ingredients except for the green onions. Pour them into a small pot and bring to a boil. Turn the heat down to low and keep warm while you are deep-frying the chicken.
Heat wok and add the oil for deep-frying. When the oil is ready, add the marinated chicken pieces a few at a time, sliding them in and being careful not to overcrowd the wok. Deep-fry until golden brown.
Remove the cooked chicken pieces from the wok and drain on paper towels. Repeat with the remainder of the chicken.
Just before you are finished deep-frying, bring the sauce back up to a boil. Mix in the green onion. Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve with rice.

SESAME CHICKEN AND STIR-FRIED VEGETABLES
Can be prepared in 45 minutes or less.
1 whole boneless chicken breast, halved
2 teaspoons sesame seeds
1 tablespoon vegetable oil plus additional for brushing the grill pan
1/4 pound fresh shiitake or white mushrooms, stems discarded and
the caps sliced thin
1/2 pound cabbage, sliced thin (about 2 cups)
1 small red bell pepper, cut into julienne strips
2 teaspoons white-wine vinegar
2 teaspoons soy sauce
1 teaspoon Oriental sesame oil
1/2 teaspoon minced peeled fresh gingerroot
1/4 teaspoon sugar

Coat the chicken with the sesame seeds and season it with salt and black pepper. Heat a ridged grill pan or heavy skillet over moderately high heat until it is hot, brush it with the additional vegetable oil, and in it sauté the chicken for 7 to 9 minutes on each side, or until it is just springy to the touch.

While the chicken is cooking, in a large skillet heat the remaining 1 tablespoon vegetable oil over moderately high heat until it is hot but not smoking and in it stir-fry the mushrooms for 3 minutes. Add the cabbage and the bell pepper and stir-fry the vegetables for 5 minutes, or until they are crisp-tender. In a small bowl combine well the vinegar, the soy sauce, the sesame oil, the gingerroot, and the sugar, add the mixture to the vegetables with salt and black pepper to taste, and stir-fry the mixture over moderately high heat for 1 minute. Divide the vegetable mixture between 2 heated plates, cut the chicken against the grain into 1/4-inch-thick slices, and arrange it on top of the vegetables.

Serves 2.

Title: Sesame Chicken

Ingredients

2 tb margarine
2 tb oil
1 chicken, frying (2 1/2 - 3
-lbs.) cu; t into serving pi
1/3 c flour seasoned with pepper
1/4 c sesame seeds
1/2 lg lemon, use juice
3 tb green onions, minced
1/2 c wine, dry white

Instructions

Melt margarine with oil in baking pan. Allow to cool slightly but not
harden. In a paper bag, shake chicken in seasoned flour until coated.
Then roll pieces in oil in baking pan and arrange do that pieces do
not touch.

Sprinkle with lemon juice and sesame seeds. Bake at 375 degrees for 30
minutes, or until lightly browned. Turn chicken; sprinkle with sesame
seeds and minced onion. Pour wine into bottom of pan and cook for
30-45 minutes, basting occasionally, until done.

Ingredients

4 tb peanut butter
3 ts water (see directions)
2 ts sesame oil
1 ds soy sauce
1/2 ts sugar
1 ds tabasco, to taste
3 c cooked spaghetti noodles

Instructions

Cook spaghetti, drain and rinse with cold water (adjust how much
spaghetti you make depending upon how hungry you are!) Mix peanut
butter with a few teaspoons of warm water until creamy and light in
color. Add sesame oil, dash soy sauce, dash Tabasco to taste. Pour
over spaghetti.
