9 Ounces Cannellini Beans
3 Tablespoons Olive Oil
1 Onion, Finely Chopped
2 Carrots, Finely Chopped
1 Clove of Garlic, Minced
2 Celery Stalks, Finely Chopped
1 Pound Spinach, Chopped
2 Zucchini, Cut Into Small Cubes
1 Cup Green Beans Cut Into 1 Inch Pieces
1 Large Potato, Peeled And Cut Into 1 1/2 Inch Pieces
1 Cup Chopped, Peeled Tomatoes
2 1/2 Pints Water
7 Ounces (200g) Rice
To Serve:
5 Tablespoons Pesto Mixed With 5 Tablespoons Olive Oil
In a large saucepan, heat the oil, then saute the onion, celery, carrots and garlic until soft. Add the potatoes, tomatoes, and water, and mix everything together. Cook for about 20 minutes over low heat. Add the zucchini and beans, cover and simmer for 1 hour. Add the cannellini beans, spinach, and rice, cover and simmer 20 minutes or until the rice is tender. Season with salt and pepper.
Serve at room temperature, with a drizzle of the pesto oil mixture on top. Add a crisp green salad and some crusty bread (grilled garlic bread works very nicely) for a complete meal.

l large ham bone or 2 meaty bacon knuckles.
2 large onions chopped
3 medium carrots sliced
1 small parsnip diced
1 med. head white cabbage shredded
125g (4oz) dried haricot beans soaked overnight and drained
450g (1lb) canned tomatoes
1 litre (2 pints) water
salt and pepper to taste
75g (3oz) elbow macaroni
grated cheese for serving.
Put bone or knuckles into large pan. Add all remaining ingredients except mararoni and cheese. Bring to boil, lower heat.
Cover and simmer for about 2 hours, adding extra water if soup seems to be thickening up too much, add macaroni cover and cook for 15 mins. Serve each portion topped heavily with grated cheese.
You can use Potato instead of Parsnip and you can use chopped slices of bacon instead of Knuckle.
