I need a simple and easy Chicken Vindaloo recipe!

Wow how ironic - I made this this past weekend! In a crock pot to boot, mind you it probably isn't terribly authentic, but boy was it good!

3 tablespoons vinegar
3 garlic cloves, minced
1 1/2 tablespoons fresh ginger
3/4 tablespoon curry powder
1 tablespoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground hot pepper
1 tablespoon mustard seeds
2 tablespoons olive oil
1 cup tomato sauce
1 cinnamon stick
1 small onion, chopped
3 boneless skinless chicken breast halves, quartered
2 tablespoons fresh parsley, chopped

1. Puree first 10 ingredients in a blender.
2. Pour into the crockpot, add tomato sauce, cinnamon stick and onion and mix well.
3. Add chicken and turn to cover.
4. Cook on low for 5 hours.
5. Sprinkle with chopped parsley before serving.
6. Serve with rice or rolls, enjoy!

Ingredients
1 cup thinly chopped onions
2 Tbs cooking oil
1 lb boneless chicken, chopped
3-4 Tbs Patak's vindaloo paste
3 medium potatoes, cubed (~2cm)
2 cups of water, more or less.
Preparation
In a wok, fry the onions over low to moderate heat in the oil until they are carmelized. Add the chicken, increase the heat, and stir fry until the chicken turns white.
Add vindaloo paste, water, and potatoes. (The water should almost cover everything.) Stir well, and simmer until the potatoes are cooked (20-30 minutes).

Serve over rice.
