Give her good breakfast (since you say she is a poor eater in the mornings). I would suggest Oat meal - easily available in Indian markets. It releases energy at late bursts. It keeps your daughter going. Its easy to make - just boil water, add the oat flakes, some sugar if required, you can top it up with fruits.
Give her one glass of fruit juice (like Tropicana 100% pure juice - no preservatives - additives) after the breakfast.

For lunch, you can follow your normal lunch - sambar, curry, rasam and curd. For dinner try to avoid rice - go for chappaties at least 3 days a week. You can easily motivate her by showing an Ad coming in TV with Sneha (Tamil actress) for some Atta - which shows her daughter dancing.

Silk soymilks (plain, vanilla, chocolate, etc...), healthy cereals...(Cheerios, Special K, Quaker flavored Oatmeal is the BEST! nice n warm, tasty, AND nutritious)... toast, "fake" eggs/omlettes, etc... Morningstar Farms 'veggie' sausages, ... scramble some tofu with fruits/juices, waffles, fruit juices...fruits...
