Depends.
If you are cooking fish then its best to keep the lid off as the fish tends to break up if the lid is on.
For meats keep the lid on.

If it is a dry curry lid on, if it has a lot of sauce lid off to thicken the sauce and make the flavour more intense.

most people say cooked with lid off . but for intense curry cook then leave for 24hrs, then cook again but use a lid with a steam vent this will keep it tasting great ,.good luck in your quest...

Lid off. But I always dry roast the spices first until they start to pop. I'm going to stop putting mustard seed in the pan. They can't make any difference to the flavour, since they pop all over my kitchen floor!

only difference is it will cook faster with the lid on and if you want a thin sauce cook it slowly for the thicker sauce cook on high heat
