DEEP DISH BROWNINES
INGREDIENTS:
3/4 cup butter, melted
1 1/2 cups white sugar
1 1/2 teaspoons vanilla extract
3 eggs
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square pan.
In a large bowl, blend melted butter, sugar and vanilla. Beat in eggs one at a time. Combine the flour, cocoa, baking powder and salt. Gradually blend into the egg mixture. Spread the batter into the prepared pan.
Bake in preheated oven for 40 to 45 minutes, or until brownies begin to pull away from the sides of the pan. Let brownies cool, then cut into squares. Enjoy!
REESE'S PEANUT BUTTER BROWNIES
INGREDIENTS:
6 tablespoons butter or margarine, melted
1 1/4 cups sugar
2 teaspoons vanilla extract, divided
3 eggs, divided
1 cup all-purpose flour
2 tablespoons all-purpose flour
1/3 cup HERSHEY®'S Cocoa Powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 (14 ounce) can sweetened condensed milk (not evaporated milk)
1/2 cup REESE'S® Creamy Peanut Butter
1 (11 ounce) package REESE'S® Peanut Butter and Milk Chocolate Chips, divided
3/4 teaspoon shortening

DIRECTIONS:
Heat oven to 350 degrees F. Grease 13x9x2-inch baking pan.
Stir together butter, sugar and 1 teaspoon vanilla in large bowl. Add 2 eggs; stir until blended. Stir together flour, cocoa, baking powder and salt. Add to egg mixture, stirring until blended. Spread in prepared pan. Bake 20 minutes.
Meanwhile, stir together sweetened condensed milk, peanut butter, remaining egg and remaining 1 teaspoon vanilla extract. Pour evenly over hot brownie. Set aside 2 tablespoons chips; sprinkle remaining chips over peanut butter mixture. Return to oven; continue baking 20 to 25 minutes or until peanut butter layer is set and edges begin to brown. Cool completely in pan on wire rack.
Place reserved chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, until chips are melted and mixture is smooth when stirred. Drizzle over top of bars. When drizzle is firm, cut into bars. Store loosely covered at room temperature.
TWO TONE BROWNIES
INGREDIENTS:
1/4 cup butter
3 (1 ounce) squares bittersweet chocolate
1/2 cup white sugar
1 teaspoon vanilla extract
1 egg, beaten
1/2 cup all-purpose flour
1/4 cup butter
1/2 cup white chocolate chips
1/2 cup white sugar
1 teaspoon vanilla extract
1 egg, beaten
1/2 cup all-purpose flour

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C). Lightly brush an 8 inch square tin with melted butter or oil. Line the base with baking paper, extending over two sides.
Stir 1/4 cup butter or margarine and dark chocolate in the top of a double boiler until just melted. Using a wooden spoon, beat 1/2 cup sugar, vanilla extract, and 1 egg in a medium bowl until combined. Stir in the melted chocolate mixture. Add 1/2 cup flour, stirring until just combined; don't over beat.
Stir 1/4 cup butter or margarine and white chocolate in the top of a double boiler until just melted. Using a wooden spoon, beat 1 /2 cup sugar, vanilla extract and 1 egg in a second bowl until combined. Stir in the white chocolate mixture. Add 1/2 cup flour, stirring until just combined; don't over beat.
Drop large spoonfuls of the mixtures alternately and evenly, next to one another, in a single layer, in the tin. Gently smooth the surface, without combining the mixtures.
Bake for 35 minutes, or until firm. Allow to cool in the tin before cutting into small squares.
MARSHMALLOW FUDGE BAR BROWNINES
INGREDIENTS:
2 cups white sugar
1/4 cup unsweetened cocoa powder
1 cup butter, melted
4 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts
1 (16 ounce) package miniature marshmallows
1/2 cup brown sugar
1/4 cup water
1 (1 ounce) square unsweetened baking chocolate
1 tablespoon butter
1 teaspoon vanilla extract
1 1/2 cups confectioners' sugar

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
In a large bowl, stir together the white sugar and cocoa. Mix in the melted butter until well blended. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Combine the flour, baking soda and salt; stir into the chocolate mixture. Fold in walnuts. Spread evenly into the prepared pan.
Bake for 30 minutes in the preheated oven, until the cake starts to pull away from the sides of the pan. Remove from the oven and cover with an even layer of miniature marshmallows. Return to the oven for about 2 to 3 minutes longer. Remove from the oven and allow to cool in the pan.
In a small saucepan over medium heat, combine brown sugar, water and unsweetened chocolate. Bring to a boil and boil for 3 minutes. Stir in 1 tablespoon butter and 1 teaspoon vanilla until well blended. Mix in the confectioners' sugar until smooth. Spread over the marshmallow layer. Allow frosting to set before cutting into bars.

Sister Kathy's Grilled Brownies
The best thing about these brownies is that they are fat free, sugar free, and calorie free. (if you don't eat any - if you do, well...nothing's really free, is it?)
Ingredients
One and 1/2 sticks butter (6 ounces), melted
5 heaping tablespoons powdered cocoa
2 cups white sugar
4 whole eggs
One and 1/2 cups flour
1-1/2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon salt
In a saucepan over medium heat, melt the butter, then add the cocoa, mixing well. Remove the pan from the heat. In a separate mixing bowl, combine the flour, baking powder and salt. Add the eggs, vanilla and sugar to the cocoa and butter, mixing thoroughly. Gently stir in the dry ingredients. Don't overmix the batter, or the brownies will be tough. Pour the batter into a greased and floured 9-inch by 13-inch cake pan.
Grill the brownies for 30 minutes at 350 degrees Fahrenheit. Use the indirect grilling method.
Remove and let cool for one-half hour before cutting.

Try these great Oreo brownies
Amount Measure Ingredient -- Preparation Method

1/2 cup Unsalted butter -- softened
1 1/4 cups Sugar
3 large Eggs
5 ounces Unsweetened chocolate -- melte
2 teaspoons Pure vanilla extract
1/2 cup All-purpose flour
12 Oreo cookies -- coarsely chopp
1. Heat oven to 325 degrees. Line a 9- or 10-inch square baking pan with aluminum foil and lightly oil the foil.
2. Beat butter and sugar in large bowl of electric mixer until light and fluffy, about 2 minutes.
Add eggs, one at a time, mixing well after each addition.
Mix in melted chocolate and vanilla.
Add flour and mix in on low speed.
With a rubber spatula, fold in cookies.
3. Transfer batter to prepared pan; spread into an even layer with a rubb spatula.
Bake until a toothpick inserted in the center comes out clean, 40 45 minutes.
Cool on wire rack before cutting into squares.

make them from scratch using the One bowl brownie recipe on the back of the Baker's unsweetened chocolate box. I've been doing it this way for 20 years and everyone loves them.
notes about the recipe - i always use real butter. I use 2 extra large eggs instead of 3 eggs as called for. (recipes are created using medium eggs, I only buy xl, and 3 makes them too "cakey".) I use walnuts not pecans.

Fudgy Brownies
Yield: 16
6 Tablespoons margarine
4 ounces unsweetened chocolate
1/3 cup skim milk
1/3 cup apricot spreadable fruit
1 egg yolk
1 teaspoon vanilla
1/2 cup all-purpose flour
1-/1/2 cups suag or 3/4 cup Sugar Substitute (recommended: Splenda)
1/8 teaspoon salt
3 egg whites
1/8 teaspoon cream of tartar
1/3 cup coarsely chopped walnuts (optional)
Heat margarine, chocolate, milk and apricot preserves in small saucepan, whisking frequently, until chocolate is almost melted. Remove from heat; whisk in egg yolk and vanilla; mix in combined flour, sugar substitute, baking powder, and salt until smooth.
Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocalate mixture into egg whites; fold in walnuts if desired. Pour batter into greased 8-inch square baking pan.
Bake in preheated 350 degree F oven until brownies are firm to touch and toothpick comes out clean, 18-20 minutes (do not overbake). Cool on wire rack. Server warm or at room temperature.
