Whenever I go for a long period of time without any rice in my diet, I crave it. I've lived all over the country and found that people in other regions don't eat rice as part of other dishes the way we do in New Orleans.

At first I thought you were nuts, but when I thought about it, you are absolutely correct!

Areas with dense populations of Africans, Asians, Blacks, Caribbeans, and Middle Easterns will have rice as a staple. And you won't find the instant rice in the markets, either!

Areas that are primarily Caucasian will use potatoes.

I'm Black. I grew up with a pot of rice on the stove everyday.

We do use rice, just not anywhere near as much. It probably has to do with what is grown in our area. In Illinois, we have corn and soybeans, and wheat is grown nearby in Iowa and Kansas, so we tend to go with breads and pastas made of either corn, wheat or soy. Since rice is primarily grown in Southern/Southeastern US, one would expect that to be the center point of rice dishes for the US.
