hmmm... in the name of YUMMY i cant resist but share this recipie for a chutney with you. here we go...

ingredients:

clean bottle gourd (doodhi, lauki) peels diced -- 1 cup
roasted peanut powder or roasted sesame powder -- 1/2 cup
tamarind pulp -- 1/2 cups
dried red chillies -- 4
mustard seeds -- 1+1/2 teaspoons
urad dal -- 1 teaspoon
cumin seeds -- 1 teaspoon
turmeric powder -- 1/2 teaspoon
crushed jaggery -- 1 tablespoon
vegetable oil -- 2 tablespoons

Method:

wash the bottlegourd thoroughly and peel it. keep the peels (u can use the gourd to make sabzi). dice the peels and set them aside.

put 2 tablespoons of oil in the wok or frying pan and heat it. add mustard seeds to it and let them pop, after that add urad daal and cumin seeds and when they are light brown add dry red chillies to it, now add turmeric powder and the peels to the frying pan stir saute for 5 mins. cover with lid and turn off the stove.

let it stay for another 5 mins .

now in a grinder /mixer put the entire stuff that was in the frying pan and make a paste of it. add ground nut / sesame seed powder and crushed jaggery along with tamarid pulp and grind to a smooth paste.
Add salt to taste and a little water to get desired consistency.

take it out in a bowl and its ready to go with parathas or chapatis or even freshly made rice!

oh one more thing when u rinse the mixer jar dont throw away the water, add it to ur dal and savor a different flavour !

YUMMY... isnt it!

This is very "YUMMY"!
Tomato Chutney
2 (14 1/2 0z.) cans diced tomatoes, un-drained
1 cup firmly packed light brown sugar
1/2 granulated sugar
2 small bell peppers, diced
2 TBS. ketchup
1 tsp. pepper1/8 to 1/4 tsp hot sauce
Bring all ingredients to a boil in a medium sauce pan, stirring occasionally; reduce heat, and simmer, stirring occasionally for 1 1/2 to 2 hours or until thickened. Makes 5 cups.
This goes good with Fried Green Tomatoes. It's wonderful...goes with anything.

Green Chutney:

INGREDIENTS:
1 bunch fresh cilantro
1 clove garlic
1 tablespoon minced fresh ginger root
1 minced hot green chile peppers
1 tablespoon peanuts
salt to taste
2 tablespoons lemon juice

DIRECTIONS:
Blend the following in a food processor until smooth: cilantro, garlic, ginger, green chili, peanuts, salt to taste, and lemon juice. Add a few drops of water if the mixture is too dry.

Shhh, dont worry your pretty little head this is Yummy and i'm and adult so there :-)

here's my favourite one.....if u like indian cusine u've got 2 try this one:
Ingredients:
1)mint leaves.
2)2-4 cloves of garlic...depending on ur taste.
3)a tamarind stalk
4)green chilies.....to taste
5)corriander leaves about 1/4th the amount of mint leaves
6)salt
Preparation:
mash the mint,corriander and green clillies and mix in some mustard or olive oil (optional) whichever u prefer.
wet the tamarind in water 4 about 5 minutes and when they are soft , simply break the stalk and squeeze out the pulp into the mixture.....mix well with salt to taste....enjoy..

I presume u r asking for coconut chutney :- take a handful of grated coconut add 2 green chillies some soaked cashews a slice of ginger and salt. grind to a fine paste. garnish with popped mustard seeds. instead of mustard seeds u cud also add a squeeze of lemon juice. adjust ingredients according to taste

use apples and sultanas and spices. My granny makes the best chutney but im not entirely sure what goes into it
