There are probably many different ways to make this but my grandma used to make my favorite version:
Place desired number of sliced cucumbers in well salted water (it should taste like sea water). Soak for at least 1 hour, up to 3 hours. Drain all of the water and then squeeze out as much liquid from the cucumbers as possible. They will look like less than half of what you started with.
Put cucumbers in a glass bowl and add some all purpose white vinegar (start with a tablespoon, you can always add more), a dollop of sour cream, lots of cracked black pepper and 1/2 of a thinly sliced sweet yellow or red onion, if desired. Stir and taste to see if you would like more vinegar.
I used to LOVE this recipe. My grandpa was always the designated taster to see if there was enough vinegar in the recipe!

This one sounds good:

Cucumber Salad Extraordinaire
4-5 medium cucumbers
1/2 tablespoon salt
2 tablespoon vegan sour cream or vegan yogurt
1 tablespoon chopped fresh chives
2 tablespoon chopped fresh dill
1 clove garlic, pressed (as a garlic lover, I usually ratchet that up to 3)
pepper to taste
Directions:
Peel cucumbers and slice into 1/4 inch rounds. Add salt, mix together and set aside 1 hour. Rinse off salt and press out excess liquid. Stir in remaining ingredients and chill at least 1 hour. Stir before serving. Easy and heavenly!

Israeli Cucumber Salad.
Ingredients:
4 scallions, cut into 1-inch lengths
¼ teaspoon of salt
Juice of one lemon, freshly squeezed
1 large cucumber, peeled and thinly sliced
1 bunch red radishes (8-10), thinly sliced
½ cup sour cream (don’t substitute)
Garnish:
1 tablespoon chopped chives
Put the scallions and salt in a glass or wooden bowl, then use the edge and bottom of a heavy drinking glass to smash the scallions and salt thoroughly. Add the lemon juice and mix thoroughly. Add the cucumber, radishes and sour cream; mix well. Garnish with chopped chives and serve

Creamy Cucumber Dressing
8 servings.
INGREDIENTS:
1 cup plain yogurt
1/2 cucumber, peeled and finely chopped
1 teaspoon fresh lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon ground white pepper
DIRECTIONS:
In a blender, combine the yogurt, cucumber, lemon juice, garlic, salt and pepper. Blend until smooth and refrigerate until chilled.

Vegan recipe (also kosher)
4 skinned cucumbers sliced very thin
1 yellow onion, peeled and sliced thin
3/4 cup sugar
1/2 cup water
1 cup white distilled vinegar
1/2 teaspoon minced dill
pinch salt (I use kosher)
Add sugar to vinegar, water, and dill. Bring to boil.
Pour over cucumber slices and onion slices, add pinch of salt, if needed
Chill.

That sounds good. I use seasoned rice vinegar. I also add red onion, alvocado and tomatoes to my cucumber salad...mmmmmm

I also like to try poppyseed dresssing and almost every salad I have evermade goes better with a handful of mandarin orange slices or sliced grapes. Sunflower seeds are also great for adding a little texture
