I found candy molds in the shape of pickles online and you might be able to find them at your local craft store. Making molded candies is super easy.
What about rice krispy treats? You can shape them like pickles by hand. Add green food color to the marshmallows before adding the rice krispies. Or dip them in white chocolate colored green.

What an original idea! And oh so cute. How about using green frosting on those Nutter Butter Cookies. You could use a darker green frosting or one of those edible markers to make the details of a pickle. Lots of good answers her already. Just thought I'd throw another into the pot. Would still taste great dipped in the ice cream too! Have fun.

Take regular sugar cookie dough and shape like small, long whole pickles, add some of those round silver ball cake decoration things over the surface for the bumps, bake, and frost all over with green tinted vanilla icing, that's not too thick so the bumps still show, when cool. If you make the cookies too big or fat, they may not bake into the center enough.

Try thinly spreading green frosting on a pretzel stick, the salt would look like the pricklies. Pregnant women love sweet and salty too. LOL. Just an idea, could also roll that packaged sugar dough together w/ food coloring and then after baking and hot roll in course sugar. Good luck, and cute idea.

i would use cake as you can cut it better to look like a pickleand the icing would match better...serve candy and cookies on side to replace the big cake you were going to use,,,,if you could find a pan that used for corn bread that looks like ears of corn that would make great cake dills you could make your own molds using foil just be careful with your cake cooking times...

Vienna cookies are about the right shape. You could get some of those and use a green food decorating spray to paint them green. Don't use regular spray paint! There are food decorating sprays at the grocery.

Thats a cute idea. I would use either a butter cookie recipie or maybe shortbread and green food color, and make them look as realistic as possible.
