Hi, does anyone know an authentic recipe for Jamacian or Caribbean Patties either meat or vegetarian. They are similar to a pastie, only the pastry is coloured with curry powder or turmeric. I used to be able to buy them at two or three places in town even at Sainsburys but now no-one sells them. Even a website with an authentic recipe would be handy. Thanks for your help in advance.

Ingredients for Meat Filling:

2 lbs. Ground Beef

2 stalks Scallions (chopped)

1 Large Onion (chopped)

1½ cups Bread Crumbs

2 stalks Thyme (finely chopped)

1 tsp. Sugar

1 tsp. Salt

1 Scotch Bonnet Pepper (chopped and seeded)

1 cup Beef Stock




Ingredients for Pie Crust:

2 lbs. Self Rising Flour

1 cup Beef Suet

1 tbsp. Ground Tumeric or Jamaican Curry Powder

1 stick Margarine

1 pint Cold Water (at or below 40 degrees)


Method for Crust:


Mix flour and curry powder or tumeric, beef suet, and margarine together in until they look like crumbs. Add the cold water to the mixture to make dough.

Sprinkle some flour on the cleaned countertop and roll the dough with a rolling pin. If you don’t have a rolling pin, use a smooth soda bottle.

Roll until the dough is about 1/8” thick.


Use a saucer or bowl to make circular cuts in the dough. Let the pieces sit in a bowl for about 30 minutes, or while you are making the meat filling.


Method for Meat Filling :

Brown ground beef in a skillet, and then add onions, thyme, scotch bonnet pepper, salt, sugar, and scallions. Turn the heat to medium.

Use a fork or spatula to fold in the ingredients. Now add beef stock and allow the meat to cook for about 20 minutes, and then add bread crumbs to the pot.

Cook for another 7 minutes, taste meat and add more salt if needed.

Baking the Patties

You need to pre-heat the oven to 350 degrees F. Add spoons of meat filling to the pre-cut dough pieces. Fold over dough to form a half-moon shape.

Use the end of a dining fork to seal the crescent edge of the patty while making a pattern.

Place the patties on a lightly greased baking sheet and brush each patty with a little oil or melted margarine.

Bake for about 30-35 minutes.

You can “experiment” with this recipe until you get the desired patties you like. For example could use different types of filling like chicken, seafood, or vegetable.

I recommend the old Carbomb. you like a pint of Guinness you like a shot glass full of Baily's now drop the shot glass of Baily's into the Guinness and drink it down as rapid as you could. Guinness is amazingly filling. persist with up with a Cornbeef sandwich with some warm mustard on it, oh i won't be in a position to look ahead to St. patty's day.

I used to buy them 30 years ago, at Portobello Road market London,
they were fire hot but delicious.

I am half jamaican and here is the recipe:


Jamaican Beef Patties
Dough
2 cups unbleached all-purpose flour
1/2 tablespoon curry powder
1/2 teaspoon salt
1/2 cup vegetable shortening
5 tablespoons cold water

Mix together dry ingredients thoroughly in a medium size mixing bowl. Add vegetable shortening and cold water; rub them into the seasoned flour with your fingers until you have a stiff dough. If the dough is too dry to hold together, add more cold water, 1/2 teaspoon at a time. Wrap the dough in plastic and chill it in the refrigerator for at least 2 hours.

Meanwhile, make the filling.

After the filling is made, roll out the dough on a lightly floured work surface to 1/8-inch thick. Cut the dough into circles 5 inches in diameter. This is easily accomplished by pressing the edges of a 5-inch diameter plate or bowl into the dough, and then following the outline with a sharp knife to cut the circles. Roll out the scraps and cut more circles until all the dough is used.

Assemble beef patties by spooning about 1 1/2 tablespoons filling on one side of a pastry circle. Fold the other half of the circle over the filling so the edges meet, forming a half-moon. Seal the edges by pressing lightly with your fingertips and then with the tines of a fork. Place the beef patties on a baking sheet. Brush the tops of the beef patties with the beaten egg and bake them on the upper rack of a preheated 400 degree F oven until golden brown, about 15 minutes. Remove the beef patties from the oven and transfer them to wire racks. Serve them while they are still warm.

Makes about 1 dozen.

Filling
1/2 pound lean ground beef
1/2 pound hot or sweet Italian link
sausage, removed from casing
1 medium yellow onion, finely minced
1 large clove garlic, finely minced
1/2 Scotch bonnet chile or 1 jalapeño,
seeded and finely minced (optional)
1/2 cup plain dry bread crumbs
1 tablespoon curry powder
1/2 teaspoon dried thyme
1/2 teaspoon rubbed sage
1 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper
1/2 cup water
2 medium scallions, root ends removed, minced
1 large egg yolk, beaten

Sauté ground beef, sausage, onions, garlic and chile in a large skillet over medium-high heat until brown, about 15 minutes, breaking the meats up with a fork as they cook. Reduce heat to low; add bread crumbs, curry powder, thyme, sage, salt, pepper and water. Cook the filling, stirring frequently, for 5 minutes. Stir in the scallions. Remove from the heat and allow the filling to cool to room temperature.

HAITIAN PATTIES



Ingrediants

1 cup cold water
1 teaspoon salt
3 cups all-purpose flour
1 cup vegetable shortening and ¼ cup butter mixed together
1 egg yolk, beaten
2 teaspoons of parsley
2 chopped shallots
1 chopped garlic clove
1 lbs pound ground beef, seasoned
1 tablespoon of beef or broth
Hot pepper to taste



Directions:

1.Pound to paste the parsley, pepper, shallot, and garlic.
2. Add seasoning paste and broth to cooked beef and mix well.
3. Cook covered on medium heat for 10 minutes. Stir constantly.
4. Uncover until liquids are absorbed. Now filling is ready.
5. Place flour in a large mixing bowl and make a whole in the center. Pour in water and salt. Mix lightly with a spoon without kneading. Place dough in refrigerator 30 minutes.
6. Roll the dough into a rectangle 1/4 inch thick. Spread half the shortening mix on the dough. Fold one side over the middle and spread this section with the remaining shortening. Fold over the remaining section and again roll out to 1/4 inch thickness. Fold again into thirds and roll out. Repeat this rolling process a third time. Refrigerate dough overnight.
7. Roll the dough to about ½ inch thickness. Cut the dough into 2 1/2 inch rounds.
8. Place a tablespoonful of beef on one side of the dough rounds. Fold and lightly press ends together. Place the patties on a baking sheet. Brush the . Cover with remaining rounds, pressing the edges down. Brush the tops and edges of the patties with egg yolk before placing in the oven. Place a pan of water on the bottom rack of the oven.
9. Bake at 400 F 30 minutes, then turn the oven control to 300 F and bake 20 minutes, or until golden brown
