First let me say that lots of Jews eat whatever fish they want. The right question is, what kinds of fish are kosher. Not all Jews keep kosher.
Many people have said any fish with scales. This is not quite true. The scales must be able to be removed without damaging the skin. For example, sturgeon have scales, but they are embedded in the skin. They cannot be removed without tearing the skin, and so sturgeon is not kosher.

Jews who keep kosher can eat any fish with fin and scales. No cat fish, no skate, no shark, no eel (they have no scales), no shellfish, that includes shrimp, mussels, crabs, clams, lobster, etc. Jews can eat any bird except birds of prey, and any meat as long as it has cloven hoof and chews its cud. All fruit and vegetables are kosher. Nothing leavened during Passover including corn syrup which the corn must ferment before the syrup is extracted. That's why soda tastes better during Passover, it's sweetened with sugar not corn syrup. No meat and milk at same meal. No cheeseburgers with a malted, absolutely taboo. Nothing Traif can be eaten. Food that is not kosher and hence may not be eaten by observant Jews. As above, this includes pork, shellfish (lobster, shrimp, etc.), lizards and snakes, the meat of animals who died on their own, and food that mixes meat and milk (like pepperoni pizza).

I am Jewish and come from a very traditional background. We can eat any type of fish that has scales. We cannot eat things such as shrimp. lobster, crab, clams, oysters, mussels. But, these are not fish, they are crustations.

Only fish with FINS & SCALES e.g. anchovy, barracuda, bass, black pomfret, bluefish, bluegill, bream, carp, cod, crappie, dorado, drum, flounder, grouper, grunt, haddock, hake, halibut, hardhead, herring, kingfish, mackerel, minnow, mullet, perch, pile, pollack, rockfish, salmon, sardine, shad, silver hake, smelt, snapper, sole, steelhead, sucker, sunfish, tarpon, trout, tuna,turbot, whitefish.
