I use egg whites! You can get them already bottled at your local grocery store, so you don't have to do it yourself. I use a great brand called "eggology". It changes the taste of what you're cooking a little bit, because it makes it a little blander and the consistancy a little thinner, but if you're baking with it then just increase your flour or other ingredients (such as mayo, etc.) to make it thicker in place of the yolk.

1 tablespoon of soya flour and 1/4 cup of water, cooked over a low heat until it thickens.
This can be used to substitute for eggs in baking and making mayonnaise, thickening sauces, etc.
It cannot be used where only egg whites are required. For that you could make a thick agar-agar solution (but it still will not whip up).

There is no substitute for eggs. When I am baking vegan, I use bananas and prunes whipped into a slimy paste. Obviously this sub only works on sweet baked goods.

It's not a substitute for scrambled eggs, but unsweeted applesauce is a good sub for shortening and eggs in cakes and cookies.

1 tsp baking powder
1/2 tsp baking soda
2 tbsp flour
3 tbsp water
whisk together; equals 1 egg.
I don't remember where I got this (online somewhere, I think) but it whisks up into a slimy consistency and works very well.
