Over 700 varieties of apples are described at the website linked below (some with pictures). Every kind of apple from the Brown Sweet to the Burgundy to the Pink Princess to the White Astrachan...
Everyone seems to be assuming you're talking about the *outside* of an apple, but rest assured the flesh of the apples is also described at this website. (For the White Astrachan: "Flesh fine, tender, very white, sweet, sub- acid, perfumed".)
Now I want a "White Astrachan" apple.

It depends on the person's perception. Some are color blind, seeing only in B&W, as Apple Computer once found when their first color computer was giving problems with the end used seeing in color. The staff finally resolved the problem by asking "Is your tv color, or black and white?". They added a note to the instructions:
"If the computer owned has a black and white tv connected to the computer, the color will not work on your Apple".

Apples come in every colour that's in the Rainbow. I've recently had some purplish apples.. they taste something like the pink lady
apples but a hint of tart.

the 'edible' apple:
INSIDE - white.
CORE - brown seeds
OUTSIDE - depends on the variety:
usually green when RAW,
varied colors (green, green-red, red, pink, pink-red) when RIPE
the Mac apple:
silver (white)
the iPod (shuffle, nano) apple:
white, black (present colors)
hope that helps
