Depends on your tastes and your groom's. Contact a local caterer and speak with them. They do this for a living and can advise you. I've seen everything from a pig roast to sterno set up with carving stations and all the sides from a typical buffet. You can do all tapas (appetizers) or pick a theme.
The sky is pretty much the limit, so just decide what you want and then find a caterer who can do it without a problem! Anything is possible for a wedding reception... from a clambake/lobsterfest to a true Western bbq to a 6 course Italian feast! You choose... seriously... anything is possible outdoors!

A large dinner - and make sure that it's sit down so that every guest gets individually served. We had 6 different appetizers, ranging from cold to hot, then a soup course, salad course, the entree (which consisted of a meat and fish with julienne vegetables), followed by dessert (hot fudge sundae with a slice of wedding cake). My mother in law made all Greek pastries to be served to every table after that. Our wedding was talk of the town. Go all out on the food - if people have eaten good food, they will love your wedding no matter what

I would just do alot of various appetizers that can double as a meal. Have round table stations spread out over the area so people can pick. Having them spread out also avoids long lines at a buffet.
