Oxidation. Chemical reaction between the air and the peel. Same goes for avacado, apples and pears. You can stop by squeezing lemon juice over the piece.

Oxidisation makes the banana skin dark after peeling beacuse theres too much oxygen in the air therefore that explains ur question it happens to other fruits as well i.e apple orange or any other fruit

oxygen in the air reacts with the matter present onthe inside of the skin and the oxidised residue which is stable is seen as a coating.The same is true of many vegetables and fruits like apple .You a observe a similar phenomenon in cut plantain bark ueed as a vegetable.ometimes to prevent such coating you may add lime juice or put the cut veg in water.If you, alternatively can put peeled banana into a closed container and place ina freezer compartment.

its rotting..oxygen is getting to it..same thing that happens to your apple core just minutes after your done.
