You're absolutely right. I'm surprised half of us eating out in restaurants haven't died! Not only chefs in restaurant, but butchers too. I've seen a butcher get a small cut on his hand and still continued to cut and serve meat. I've seen chefs sneeze out loud unable to cover the food because their hands are stuck to dough....I've seen some things happen in the kitchen of these places I wouldn't dare write down and do you know what, I still eat in restaurants. A Glutton for punishment, that's me.

If they wash their hands, and use proper hygiene, then there is no risk. Otherwise, ALL of us would be sick ALL the time. Someone with hepatitis or other highly infectious diseases, should not be around food preparation. But, these aren't illnesses healthy people carry around on a regular basis.
I contracted food poisoning from a restaurant earlier this year, as did many other people that were in the party. I don't know if it was the food or improper handling, but I suspect the latter.

Restaurants that have chefs the caliber of the one's on the cooking shows take pride in their personal hygiene. An excellent chef has to touch the food they're preparing. A lot of what they do is too detailed to be wearing gloves.. I worry about family or fast food restaurants.

A good chef will actually wash their hands, and often. A good chef often wears a hat and a coat over their clothing. They don't put these items on until they are ready to cook. A reputable restaurant has many hygiene and safety measures in place to avoid contamination. If it were that big of a problem don't you think we'd hear about incidents such as those more often?

In the place where I work, I insist my workers tie back their hair and wear hats, wash their hands often as well as wear gloves and change them regularly. When they walk into the seating area, I make them wash their hands on entering and on leaving in public view. Anyone caught scratching any part of their anatomy is seriously chastised. Picking of noses, scratching balls/armpits/ears/butts is a sack able offense. Laws differ between states and indeed countries, so when we move around the country/world and we see workers doing things that they would not be able to do in our own home states/countries it can be very disconcerting. Been there, done that,put in complaint to Arby's head office!!!

They even lick their fingers. Emeril is always reminded to clean his hands. He even jokes about it. Now. You are always taking a chance on everything you do. Just pray about it and keep going. Don't worry about the things that are beyond your control. Put it in God's hands.

Hopefully, they wash their hands a lot... but don't bet on it. As long as the food is cooked to 165º that, and your stomach acid, will kill anything pathogens...
