Carrot, Cauliflower, Cabbage, Beetroot & Mushroom. Instead of boiling these vegetable, try to steam cook it using steamer....you will feel the taste and aroma.

Well! unless you are specific of what exactly you have in mind when you talk of boiled veggies, first and foremost think of what is the purpose, loosing weight overall or to eat to keep a good diet.
You have to first of all plan clearly and then proceed,Veggies are available in plenty in Chennai. U decide what u intend doing then one can help u clearly, u can have a clear soup, veg soup, veg juices, salads with various veggies, u can have a veg so rte. without any oil.
so many and much more can be given as food, but one u shld have the inclination to cook and eat them in the right proportion at an appropriate time.

You get such a wide variety of fresh veg in India - carrots, beans, cauli etc. Rather than boiling veg, try blanching them in very hot salted water for a few mins. This keep essential nutrients in and maintains the crunchiness of the veg
