If you don't require gourmet fare, I made this when I had nothing else in the house and now it is a quick easy dinner at least once a month.
2 packages of 4 cheese Rice-a-roni
1/2 lb of ham ( either chopped up deli shaved ham or small cubes )
1 cup of frozen peas
Prepare the Rice-a-Roni according to package instructions and when you add the water, also add the ham and peas. Bring to boil, cover, reduce heat and simmer for 20 minutes. Then add cheese sauce. Done. Not gourmet or diet friendly but good, cheap and filling.

Morning Star Farms has some "Veggie Crumbles" that you can use in just about any recipe that calls for ground beef. I make haystacks, chips, beans & "fake" meat, cheese(even the fake kind), rice, salad toppings and ranch dresshing, or hot suace(rice and beans together = a complete protein.)
