Every Sunday my friends and I rotate having Sunday dinner at each others house, my turn really slipped up on me fast this time.

It is usually a theme dinner like last week Debbie had an traditional German dinner. Yummy! I want to do a traditional Southern Soul Food Dinner.

I would like to used smoked pork bones, with ever else kind of meat, just no fish since out of our group of 30 only 5 or 6 like it or are not allergic to it.

I have searched the web and found TONS of Mac and Cheese recipes, and corn bread recipes which I can make in my sleep, but what I am looking for is really good suggestions.

Fix the smoked pork bones how? Fried chicken? Honey fried? Chicken and dumplings? You get the idea. Just a good old southern soul food dinner and if you have a great idea for dessert that would be more than welcome too! I have a Ice Cream maker so any types of ice cream would be a welcome suggestion as well.

Well, I'm black so of course I know all about Soul Food and I have lots of family that lives in the south like Georgia and Florida, I don't have really any recipes but If you want to have a good soul food dinner. You have to have Fried chicken, Collard Greens, Sweet potatoes, mac n' cheese, and corn bread. But make sure PLEASE make sure you don't BUY THE CANNED COLLARD GREENS THEY ARE GROSS ALL THEY TASTE LIKE IS VINEGAR!!!! Go to Meijer or Walmart and pick them Meijer should have them. Also don't buy THE SWEET POTATOES 2 they are disgusting. But importantly make sure you have the corn bread, you have have 2 have corn bread with collard greens.
4 desert you can also have sweet potatoe pie. Make sure when making the collard greens that you have bacon grease and fat back.


{ I'm only 13 so thats why I don't have any recipes}

And the Collard Greens are thebest if youcook them with an Jalopeno pepper the biggest 1 you can find}

Girl, you can have some oxtails and rice, get a good recipe on the net for those, or fried chicken, corn bread, collard greens, mac & cheese casserole sweet potato pie for dessert with whip cream on top, and sweet tea for the drink or lemonade all home made of course, or if you don't want to use fried chicken, then girl you can use fried pork chops, or you can use BBQ ribs,you can use those neck bones in the collard greens when you cook those, or you can just buy some good collard greens black people make them the brand is called GLORY and they have some good home made canned greens from Super Walmart.Goodluck. You have to boil the pork bones first for a little while,those are usually used for greens and beans like pinto beans for instance. Since you are fixing soul food,fried chicken is the way to go.If you really want to express everyone,you can make some homemade cornbread dressing too with giblet gravy.But don't forget the baked macaroni and cheese.If you don't want to do dressing,you can always make potato salad,that is the perfect accompaniment to fried chicken.If you make greens,don't forget the cornbread and a bottle of Louisiana hot sauce for the chicken. And nothing completes the meal more than some cool iced tea,homemade that is. I hope I was a little help.

This will cause your tongue to slap your teeth out wanting another bite.

Ingredients:
A recipe is only a road map. You can add or take away.
2 pounds smoked pork neck bones

5 pounds of collards or several large bunches.
Fresh are best frozen will do.

2 teaspoon of salt or to taste. A little black pepper can't hurt. You might want to add a clove of garlic, your choice.

Cover pork neck bones with water, cook slowly, very thoroughly in large pot .
Take the collard greens and separate the leaves . Rinse each leaf individually under cold running water. Roll some of the leaves together. Then slice the leaves into thin strips using a cutting board and large knife.

Place the collard greens into large pot with pork bones. Add them until the pot is full. Allow them to wilt as they cook, then add more. Add you salt, cover and cook for thirty minutes on medium heat. Stir every few minutes to distribute the smoked meat taste evenly. Taste them to make sure they are the tenderness you prefer. Serve with your favorite meat dish such as chitterlings, ham hocks, fried chicken, ect. Serve neck bones with the collards.

If you used frozen collards, simply pour them - frozen - right from the package to the pot.

Southern folk use lots of hot sauce on their collards. Red devil is a good hot sauce.

Hey Girl. Fried chicken with soul food. Black eyed peas, fried potatos, ( or brown rice) and corn bread served with collards and neck bones. That is soul girl.

Desert for soul. Choclate cake or banana pudding. Ice tea, or cool aid.

First thing that came to mind when I saw you had the smoked pork bones, was of course collards, If you have non pork eaters you can always substitute smoked turkey necks in the greens, ham hocks are great for cooking in beans, any kind of beans or black eyed peas, too bad there aren't more fish eaters, blue crabs in a big pot with shrimps and potatoes are awesome, and very spicy.
fried chicken cooked in lard with spagetti/on the side w/tomato sauce would appeal to many,or fried chicken w/ biscuits with chicken gravy, the gravy made from the fat from the frying pan, flour, course ground pepper and salt, real mashed potatoes with chicken gravy, corn on the cob, the collards of course, only thing is is that ya gotta have cornbread with the collards, sweet corn bread, like from the jiffy mix, chitlins may be hard for many unless they are accustomed to them.sweet potatoe pie is a favorite of mine, but if you want to do something a little different, you can do pumpkin cheesecake, key lime pie, or banana pudding,or a pistachio pie, we had a baker in our family so we were spoiled on the desserts, may sound weird but sweet corn ice cream is really good.
If you have access to whole pigs ,a pig roast is great, where the whole pig is cooked whole (gutted of course)
and really good eatin.

How about Hopping John, a very popular Southern dish with black eyed peas. Can be made any number of different ways: i.e. with bacon, ham, pork neck bones (cook bones until meat falls off.

Here is a recipe I like, but you can find many many more on the internet. Bon appetit!

Hopping John with Ham

2 cups dried black-eyed peas

1/2 pound ham

2 quarts water

1 cup uncooked regular rice

1 cup chopped onion

1 cup chopped celery

2 teaspoons butter

1 teaspoon Italian seasoning

1 teaspoon sugar

2 teaspoons salt

1/4 teaspoon pepper


Sort and wash peas; place in a heavy sauce pan. Cover with water, bring to a boil, cook two minutes. Remove from heat, cover, and soak for one hour; drain.

Combine ham and two quarts water in large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 15 minutes. Add peas; bring to a boil. Reduce heat, cover and simmer 45 minutes. Add remaining ingredients, bring to a boil. Reduce heat, cover, and simmer an additional 30 minutes or until peas are done

Yeah, use them neck bones in some collard greens. Fix either BBQ Ribs or some fried chicken. Red beans and rice. Potato salad. Mac and Cheese. For dessert fix some peach cobbler.

As a good southern girl, here is what we cook down here:
1) put raw peanuts in the shell in the crockpot with water to cover and salt and let it cook on slow all night - magnificent boiled peanuts for snack while dinner is cooking - suck those juices out.
2) gotta have some pork rinds too.
3) slice squash and onions and fry them with minced bacon, salt and pepper, a little bit of sugar and enough cheap beer to just keep it wet.
4) green beans with some fatback, boiled til soft.
5) collard greens, collard greens, collard greens. rinse til sand is off. pull off all stems and just use the leaves. boil it up with a big old ham hock, salt and pepper til it is soft. serve in a bowl with the potlikker (liquid) and splash vinegar with hot peppers. Dip cornbread - use Jiffy mix. by all means, make the cornbread in a cast iron skillet baked in the oven.
6) fried chicken.
7) mac and cheese - easy in a crockpot
8) corn casserole - creamed corn mixed with corn kernels, with a mixture of some flour, cream and sugar poured over top.
9) serve a big old ham - put in a roaster pan, cover with a paste of mustard and brown sugar, but coca cola in the pan and cover with foil - bake til done. wonderful.

Peach cobbler or pineapple upside down cake for dessert... steamed collard greens as a side, boiled black eyed peas... corn bread or buttermilk buscuits. Fried chicken is a staple in southern cooking.

MEXICAN BEEF AND CORNBREAD PIE

Meat Mixture
1 lb very lean ground sirloin
1 lrg onion chopped
2 lrg tomatoes chopped
1 10oz package frozen whole kernel corn
1 lrg green pepper chopped
1 teaspn cumin powder
1 teaspn chili powder, or to taste
1/2 salt (optional)
1 tblspn Worcestershire sauce
1 cup chicken or beef stock

Cornbread Mixture

1 1/2 cups yellow cornmeal
1/2 cup all purpose flour
1 teaspoon sugar (optional)
1/4 teaspoon salt (optional)
2 teaspon baking powder
3 lgr egg whites , lightly beaten
1/2 c skim milk
1 tble spoon acceptable vegetable oil

Preheat oven to 400 F

Heat a heavy non stick skillet, at least 10 inchezs in diameter, over medium-high heat. Add ground meat and saute, stirring occasionally, 4-5 min or until meat is no longer pink. Pour meat in colander lined with paper towels and allow to drain well. Return meat to pan and add onions, cook til translucent (abt 3 min)
Add tomatoess, corn , bell pepper, cumin, chili powder, salt Worcestershire sauce and stock. Simmer 20-25 minutes

In a bowl, mic together cornmeal, flour, sugar, salt and baking powder. In another bowl, combine egg whites, milk and oil; add to cornmeal mixture . Mix lightly

Place meat mixture in a 10x 10 x 2 inch baking dish. Spon cornbread mixture over meat and spread lightlly to cover surface. Bake, uncovered, 30-40 min or until cornbread is golden brown
