This time of year, squirrels are fattening up, so if you're lucky enough to get one, peel it, gut it, put on the spit over the fire and baste with whatever marinade you prefer....That's what my cousins Bubba and Jethro say; Granny just cubes it and makes it into stew; Elly Mae loves squirrels...but as pets, not food.

Use it in tamales. Although you will probably need more than one dead squirrel. But with all the seasoning in there it will taste just fine. You can find a good recipe for tamales on the net.
True story, in the late sixties here in New Orleans, a Manuel's Hot Tamale truck stopped to pick up a dead dog in the road. Just threw in the back of the truck and drove on. Never ate one since.

if you dice it up and spread it across a pizza with tomatoes and a bit of ham. cook it in a 200 degrees celsius untill the squirrel is crispy brown. bon appetite

You might want to get a cookbook called "Game Cookbook" by Geraldine Steindler. It has recipes for porcupine, bear, quail, bear, rabbit goat, etc., aside from sauces, dips, jellys, etc. I got it as a joke for my husband one year, but it makes interesting reading if anything else!
