depends on how long you are going to be there.
I guess you are a vegetarian, as this question is in that category.
if its for 3-4 days, you can carry some
* ready-mixes (like MTR) for differen curries
* kaakra (dry roti-like preparation popular in Western India)
and buy bread, yoghurt and fruit locally.
if its for longer, look on the net and find the Indian community there and contact them.
If that data is not available, get in touch with the Embassy.. they will be able to give you some suggestions too.

The first thing is to get married and take your wife along with you.because i have been there , and the chicks there are so so so beautiful, you will be tempted to actually have more than 5 affairs atleast. Then take about a bag full of dals all kinds, take chapati flour, basmati rice, tava for chapati, pres cooker etc, spices, all kinds, clothes can come later. the other alternative is there, you suffer and say tata bye bye to your folks. Seriously, and bring some winter clothing.
