A lovely dish I call "spinach thing".
Steam the spinach, grind in some nutmeg and put it in a casserole dish.
Fry some onions and sweet peppers until they are soft, stir in a can of chopped tomotoes, then stir in some good cheese. (or savoury vegan equivalent). Put this mix on top of the spinach (or chard or beetleaf will work) and place in a fairly hot oven for about 15 mins.
Serve with a baked potato or, if you are cutting down the carbs., a pile of fresh beansprouts with a sprinkling of soy sauce on them.

"Not Your Mom's" Tater Tot Casserole
1 lb. lean ground beef
garlic salt
1 can cream of chicken soup
1 can cream of celery soup
1/2 to 1 cup milk
1 package tater tots
8 oz. shredded cheddar cheese
Brown the ground beef, then sprinkle with garlic salt.
In a bowl, combine the soups and the milk. Stir in most of the cheese, reserving a little to sprinkle on top of the casserole. Stir in the tater tots. Finally, stir in the ground beef.
Pour this mixture into a lightly greased 13x9 pan. Sprinkle with remaining cheese.
Bake in a 350 oven for 30 minutes, or until the tater tots are cooked through and the edges of the casserole are bubbly. (May take up to 45 minutes).
You can cut down on the fat by using low fat soups and cheese, and choosing the leanest ground beef you can find.

I need some too, I've got a hungry family to feed, don't feel like cooking or cleaning but i supose I'll have to. Maybe I'll just do fish fingers, although no maybe I will put some fish in a tin foil bag with wine mushrooms and tomatoes, and leavin in the oven to cook and have it with new baby potatoes, microwaved of course and a nice green veg Or maybe I'll wrap a chicken breast in a slice of bacon and microwave and have with the same, or maybe... i just don't know what I feel like doing!!!

Boiled shrimp (u-peel-'ems)/cocktail sauce, lemon wedges. With homemade garlic bread, and a wonderful huge green salad with- feta cheese, Greek olives, cucumber, Butter lettuce, Italian dressing. Homemade strawberry shortcake off the Bisquick box (only time I use Bisquick). We like a cold supper when it's hot like this (here).

Well tonight its just my daughter and I, so will take out of the freezer one of the bags of sloppy joes (we are the only ones in the family who like it, so I usually make a couple batches then freeze them in 2 serving bowls or freezer bags) cheesy french fires
