CHOUMMUS!!!! I love it. I live in the middle east and I go to choummus places allllll the time. It is one of my very favorite foods. But it has to be done just right. Nothing grainy, nothing to sour...mmmm... choummus

(and it is not hebrew for chickpeas, chickpeas in hebrew are gargarim, but you can get choummus with gargarim sittin on top)

(ah and I am also from the south and can guarantee that hummus is nothing like grits, but i love grits too, i just love food i guess)

I LOVE hummus - while I could make it myself, I usually just pick up a tub of it in the grocery store. My favourites are 60-Pepper Hummus, Jalapeno Hummus, Spicy Hummus, and Garlic Hummus. I buy Garlic Bagel Bites to dip in it. YUM!

Hummus is wonderful in all of its various entities. I love the original, with the Tahini sauce & the subtle tang of the lemon with a little parsely thrown in for that nice green bite...I also like it when it is made with white cannoli beans or when it is mixed half & half with garbanzos & black beans. I've had it with roasted peppers or lots of garlic...In fact, when I haven't been feeling well, it is the best way to re-introduce both protein & fats into my diet slowly, on a cracker or five... & get everything to digest.

I dip for pretty much everything in hummus: chips, veggies, crackers, a spoon... I like the garlicy ones and then I have garlique breath, which nothing gets rid of. But it's worth it!

Hummus is great. You can use it as a dip, and also on a sandwich. Just spread it on bread or a bagel along with tomatoes, black olives, tomatoes, onions and lettuce and maybe some cheese and sprouts. Great sandwich.
