Buy a CrockPot then you'll be able to make some good meals. On a hotplate you'll need to cook all day or buy a stove or alittle convection oven or go to OLive Garden Lol

they sell hot plate or griddles at the stores and they are awesome.
the concept is that you can cook right at the table.
we prepare our raw chicken and steak nice and seasoned. Then we cut up veggies like squash zucchini, spinach etc.
i boil rice as the side dish (which you can do on your burner) and use terriyaki as a dipping sauce
and you just sit and cook it all right there, you just take what you want as it cooks. it is awesome for 2,3,4 however may you want!!!
they cost anything from $20 and up and it is good for anything we do breakfast like that too and the best part is, its non stick so all you do is wipe it when you are done!!!!

The answer to your question is cold dishes!
When ou prepare the menu think of
a first cold dish (Salads, carpacios, pruscetta..etc)
a main hot dish
and a cold dessert
You can serve the main dish with bread or tacos on the side. but if you want to have rice, pasta, noodles..etc next to it, Then, while cooking the main dish put your pre-prepared cold rice (for example) in a sieve and cover the cooking pot wth it. So while your main dish is cooking your rice is heated as well.
another option is to pour hot water on the rice or pasta to heat it right bfore serving.

Prepare elements of your meal in advance, even the day before, so they only need to be heated up. Then use your one burner to cook the main dish. A microwave would help in this.

You can do a very nice stir-fry on one element - get a wok (no need for an electric one). A pot of chili needs just one pot, as does a pot of stew or homemade soup. How about hamburger helper - brown the meat first in the big pot then drain before finishing it according to package directions.
