Get a good cookbook, and follow the directions carefully, to make sure the jars are sealed properly. There are many variations of hot pepper recipes. I personally dry them, and use them that way. I am sure you could also freeze them: blanch (immerse in boiling water for 30 seconds-1 minute) and immediately immerse in ice water, dry them off, put them in zip locks and put in the freezer. But if you want them like they are "fresh" you will have to can them.

Slice them into rings. I put onions in with mine and then put a little salt, allrecipes.com has good recipes for canning, too for help with time and everything.
