Here's my situation: I am very thin, a picky eater, Asian (my family are regular meat eaters and every dish my mom makes has meat), and I want to find a way to gain weight without having to eat meat...I'm probably asking too much but I'm desperate...

(Don't worry, I am also a very picky eater...)

One could probably be a like a Sumo wrestler on a vegetarian diet - if they wanted to. :P

A person can definately have a healthy vegetarian life through balanced diet of fruit and vegies.

If you want to be a vegetarian with a bit more "proportion", dairy products (like animal-rennet free cheese and fresh milk) will certainly help.

Although, personally I am a lacto-vegetarian (which means I don't eat eggs), eggs are very rich in protein and might help you on your quest. But just remember, everything in moderation, as eating too many eggs can lead to certain health problems.

Any good and easy recipes?

hmm, maybe try a book called "Vegetarian Cooking for Dummies" by Suzanne Havala - (I've heard good things about it)

There are volumes of books on quick and easy ways to cook vegetarian meals.

Here's a simple recipe that seems to be quite popular with people of all eating habits (omnis, veg*ns etc):

1 can stewed tomatos/ 1 can water
1/2 cup garbanzo beans (also known as chickpeas)
1/2 cup kidney beans
spices (i.e. garlic, pepper, cilantro, oregano) to your taste

Add the can of stewed tomatos in a pot (leave the juice in) Then fill the same can to the top with water and add water, beans and spices to the pot. Simmer until warm and fragrant.

Gain weight by eating lots of avacado. It's great. It has the most fat/cholesterol content for a vegetable/fruit. You can get gucamole and use it instead of mustard,etc. on sandwiches. It's great with chips.

If you're lacto-vegetarian, try eating lots of ice cream.

Nuts help you gain weight because of the high oil content. They're great for you too.

Eat alot of pasta. I gained alot of weight eating pasta entrees one year. Good pasta has decent amounts of protien.

I'm a vegetarian too, and must say that for that matter had and been seeing a nutriologist / dietist. You should get to one too.
