Beer Brats as well as Chorizo, it's a spicy Mexican sausage, it's too good for words. Chop it up and fry it in a pan in the morning for the best omlette! or put it in hand-made flour tortillas, heat the tortillas on a flat surface until lightly golden brown then fill with chorizo and eat.mmm

My favourite has to be either Toulouse sausage or closer to home Cumberland sausage.
And the best way to cook it? It has to be in a pan, on a very low heat for about 30 minutes or so with the lid on. The secret a friend told me was to not let all the fat escape, that's what gives it the flavour.
It does mean you have to get good sausages though, otherwise they end up floating in water.
I also secretly like black pudding too!

Wild boar & Calvados sausages, roasted in the oven till the skin goes brown & crispy. Served with mashed potato to which I add pureed apple and wholegrain mustard.
