Although I'm not a vegetarian, I just recently discovered how nice tofu is. It really has gotten a bad rap as it's rather bland. However, it absorbs the flavour of whatever you put with it and has an amazing texture and taste. Here is what I do-I put some soup cubes in a small pot of boiling water, add lots of green onions, thyme, crushed pimento balls, and tofu cut into cubes. and cover and simmer for about 10-15 minutes. The tofu takes the flavour of the broth and seasonings and it's great. Sometimes I put some baby mushrooms in it as well. I do it with maggie chicken cubes but I'm sure you can use fake chicken flavoured cubes or vegetable soup instead. ☺ This works well with medium firm tofu and not firm or soft tofu. There is no set amount to add-it won't affect the flavour if you add a lot. So add as much as you'll eat. Tofu is high in good protein and not high in fat so it fills you up so you won't overeat later on in the day.

One of the quickest, easiest ways that is really good is BBQ tofu...baked in the oven. It's always best to get as much water out of the tofu as you can so it will absorb the sauce better** but it is not required. Slice tofu into pieces maybe 2x3". Lay the tofu pieces in a single layer on a cookie sheet and cover all sides of the tofu with BBQ sauce of your choice. Bake at 350 for about 10-15 min. then turn pieces over and bake another 5-10 min. Enjoy alone or on a sandwich or whatever! Good luck!

**To remove the water lay 2 or 3 layers of paper towels on a cookie sheet, lay the sliced tofu on the paper towels, add another couple of layers of paper towels, put a cutting board or another cookie sheet on top and put something semi-heavy on top of that (a can or 2 or a book). Let sit for awhile...about 1/2 hour or so...you can change the paper towels at some point if they are totally soaked.

Try these:

1) Blanch some spinach along with a teaspoon of cumin and pepper and grind it. Now, heat some oil/butter, slightly fry some tofu (1 inch diced) and finally add the spinach paste and salt. Cook and stir for a few minutes until the tofu is entirely covered with teh spinach sauce.

2) Mix some tofu cubes, cayanne, salt, Italian seasoning and olive oil. Now, arrange the cubes in a cookie sheet , put in the oven, 350 F, 10-15 minutes.

3) Melt some oil/ghee, fry half a cup of rice and a clove of garlic and few cubes of tofu. Now, add 1-1.5 cups of water and salt for taste. Cook the rice. Finally, add some soy sauce and crushed black pepper.

4) Microwave finely chopped tofu with some chopped tomatoes, peas, onions, green pepper and salt. Now, spoon this mixture into tortillas/lavash and roll on. Microwave the roll for a few seconds. Eat fresh.

5) Try shakes/smoothies made of soft tofu, some fresh fruit / juice and sugar.

6) Just cube tofu, pour your favorite tomato sauce/ketchup/any other sauce into it, add some Italian seasoning and microwave covered for 2-3 minutes.

(Before cooking tofu, press it gently in paper towel so that the water is fully gone. Otherwise it will not be good)

Try to stir fry it with some veggies. You can just use any of your favorite type of asian sauces. It is so good, especially if you brown the tofu a bit before adding all the other ingredients.

Make a sauce with chopped fresh ginger, garlic, chilli, parsley and soy sauce.

There are too many tpyes or varieties like cheese. What way to cook tofu depends on what type of tofu you have. Anyhow, the easiest way is slice them into bite-size and toss them into vegetable soup or into vegetables you are stir frying.
