I'm Indian, and I was born and I live in America, so naturally I know what the best meals are from those who never tried them before.
Most newbies are scared of trying spicy food. So try simple things like Plain dhosa. It is like a giant thin pancake thing. It's like a french crepe. Plain uttapam is the same thing, but it actually takes more like a actual pancake. Also, you can ask the waiter to make the food mild, so you can try good food without being scared. You can move it up a step by having Masala dhosa(the same thing but with potatoes and onions just order mild). Same with uttapams. There are many different types of flavors.
Those two particular foods are South Indian classics. There are spicier classics which you can ask for mild called Pav Bhaji which tastes like a sloppy joe, but it is vegetarian. It's a snack. Chole Batore is a Bombay delicacy which is two giant pieces of warm bread with spicy chick peas.
Those are all vegetarian dishes. If you are looking for meat dishes, try simple finger food tandoori chicken. It's a red-colored, made with yougurt so it has an unique taste and it is I think grilled. Indian dishes come with rice, so you can try Chicken Tikka Masala, which is a type of chicken soup that tastes really good.
It is probably best to go to a buffet, there are so many choices and they all usually have name tags. There are many appetizers like samosas(very famous) which are potato pastries. There are different types of samosas(chicken, cheese called paneer, vegetables, etc). There are simpler things like potato salads- called Aloo Tikki Chat mixed with sauces that taste like Chinese. Main entrees could be anything like Paneer- a cheese in sauce, Chicken Tikka Masala, Goat or Lamb dishes, etc. Dessert includes little pastries called sweets which taste like cheesecake, etc.
