A Vegan does not use any animal products for food or for clothing. As far as food goes, this includes honey, dairy, eggs and naturally, any creature that needs to die to provide food for us.
Vegetarians, despite all these weird and wonderful categories, do not eat anything that once had a face and that has had to die to provide us with food. So even though I have NO idea what the face of an oyster looks like, it has had to die (even if it's after we've et it) to provide us with food. So a proper vegetarian wouldn't eat that. We don't want blood, guts and veins in the teeth you know.
Any one who claims to be a vegetarian but then says they eat fish and/or poultry are NOT, repeat NOT vegetarians. They are omnivores, but omnivores who won't eat red meat (but what about red fish huh?). I'm fed up with so-called vegetarians giving us honest ones a bad name. Just remember, tuna salad or tuna bake is not food for a vegetarian.
Plus, vis a vis other answers, gelatin comes from boiled up bones, skin, hooves etc so would never be eaten by vegans or vegetarians.

some people on here are explaining things that don't make sense, the one who lists 8 possible ways of being a vegetarian is rubbish, you can't say some veggies choose to not eat poultry. poultry is meat and you wouldn't be a veggie at all if you ate any meat. veggies simply do not eat meat at all, this includes fish (if you eat fish, you're NOT a veggie) veggies also avoid animal fats and gelatine.
Vegans don't eat any meat, dairy products, eggs, honey etc.. vegans won't use or eat anything that has come from animals.

Vegans eat no animal products (milk, eggs etc) and by definition, should wear/buy no animal products (leather, suede, feathers etc). Vegetarians don't eat animals - no meat, poultry, fish etc (though some will claim to be vegetarian and still eat fish).
Basically, if it's got a face, vegetarians won't eat it. If it ever lived, or came out of anything that lived, vegans won't touch it.
A Fruitarian is one who eats only fruit, nuts and seeds, no vegetables, and doesn't beleive in cooking anything at all.

Vegans don't eat meat or anything with animal by products in it, wear leather, use products tested on animals. Infact anything that has been killed or been subjected to animal cruelty to get the end product. Vegetarians just don't eat meat.

I'm about to explode...whath our for the flying debrise.
Why do some people refer to Veggies as fish eaters....check the dictionary friends and do not redefine words just because you feel like it. Veggies do not eat fish. I've lost count of the number of times I've said this since Yahoo Answers started.
Vegans don't eat any animal derivatives, even if it does NOT result in the death of the animal. This means Vegans do not eat eggs, cheese etc.
Many veggies also choose to keep away from animal materials such as leather.

Vegetarians, or lacto-ovo-vegetarians, do not eat any meat products, but they eat dairy products and eggs. Vegetarians need to know whether a product contains gelatine or other meat-based products. Vegans do not consume any animal products.
