Do you put the Moo Shu in the pancake and wrap it like a burrito? Sorry about being so ignorant and uncultured.

Fill them up like a burrito, then roll them up and eat form the open end.

You can simply ask for Moo Shu Pancakes when you go to a Chinese market. If they can't understand, tell them it's the kind for wrapping Peking Duck. It's basically just flattened version of Chinese steam buns, made with wheat flour and water. If you really can't find those pancakes, you can always use the steam buns as substitute. You'll find them frozen, in many colours and flavours. You can steam them or microwave them. Watch out for the ones with fillings, you don't wanna eat the pork with sweet red beans.
