MY FAVORITE,
1 lb spaghetti
3 cans asaparagus
1 lrg onion chopped
1 carton sliced mushrooms
3 cloves fresh chopped garlic
1 tbsp black pepper
1/4 tsp cayanne pepper
salt to taste
Cook spaghetti as on box
combine mushrooms, onions and asapargus in skillet and simmer till onions are see thru, add your spices and continue to simmer for 15 minutes, drain spaghetti and add to mushroom mixture, cook on low for 10 more minutes.
add some good garlic bread, and a nice salad of choice, and enjoy.

Pasta and a marinara or mushroom sauce is always good and handy. So is lasagna or meatless pizza. Try breakfast for dinner -- eggs and hash browns, pancakes, or waffles. A salad with cheese, a toasted veggie and cheese sandwich are quick and easy. Baked potato with butter, sour cream, and Bacos can be an entire meal with a salad. And don't overlook peanut butter!
There are a lot of good vegetarian cookbooks on the market and hundreds of vegetarian web sites with great suggestions. Try some of those.

Eggplant parmesian with rosemary garlic bread on the side. Eggplant can be used in so many ways...you can make an eggplant burger, a roasted eggplant sandwich...you can do so many things with it. You can really use it in place of meat. But if you don't like eggplant, you can do the same thing with Portobella mushrooms. You could have a portobella burger. It's great brushed with olive oil and if you don't eat regular cheese, use soy cheese melted onto it! Yummy. With a side of fries! It's great.

Well, my favorite is a little bit of angel hair pasta with some tomatoe brucetta on it. You can buy a little container of the tomatoe brucetta sause at trader joes, and it is delicious. Heat up a little bit of zuccini and squash to put on the pasta for a delicious meal.
