I never knew this until recently and I've been cooking and gardening for years, but the green bell peppers are not ripe yet. The red and yellow ones are. The red and yellow ones are also higher in vitamin C. I guess, because they have to leave them in the field longer to ripen it takes longer to get them into the stores, so they charge more. Just my theory. If they pick them while they're still green they can start a second crop sooner and make more money by having more produce to sell.

Green peppers are just very young red peppers. So red peppers take longer to grow. So they take more farm resources, and cost more!

Because it takes longer to grow red peppers (which are just green peppers that are allowed to ripen on the vine.)

The time from planting to harvest, mostly. My bell peppers in my garden are green, but they will turn red if I leave them on a bit longer.

they want the products to be shipped out faster so when a pepper is green and looks good it's good to go. you can wait for it to grow red. i like orange peppers they're hard to find.
