Every one of the 25 Indian states has its own cuisine, but there is a huge difference between North and South Indian cuisine. The staple diet in North India is wheat, made into chappatis which they eat with various North Indian curries, in the south people eat rice and the South Indian curries are vastly different.
P.S: I don't know if you would get traditional South Indian cuisine in Devon :P this answer was for the person who thought all Indian food is the same.
