How would you improve a successful quiz night to stop it going stale?

We used to do 'around a round round'. Where teams were given a couple of minutes to think of a joke and then either the team or the quizmaster (depending on the teams confidence and the quizmaster's charisma) would then tell the joke to the pub. The joke with the most appaluse won a round of drinks for the team. You can ham it up a bit by selecting the two or three with the most laughs and then holding them up one at a time for an applause-off to see who wins. It gets people coming back with jokes they think will earn them a round. And gives everyone a laugh.

Themed nights work well, fancy dress, raffles, forfits for worst score/ answer, and free nibbles on the bar/ tables. Shows that some effort has gone into the night
