Maybe there is/was a chicken shortage in Korea?

I have had it here in Toronto and in Singapore when I was a chef, they use boneless chicken both legs and thighs, marinate in light soya sauce, rice wine, garlic and sesame oil, doing this for a few hours and sometimes overnight, then dredge it in a egg wash with eggs and water, the flour is made up of AP flour, a bit of rice flour or cornstarch, white pepper, garlic, five spice powder a dash of salt as the marinade will keep the salt in, some paprika or cayenne, Korean people are famous for there spicy foods, then shallow or deep fry the pieces a few at a time, keep warm in the oven, now I have been serve either they chili sauce "tomijohn", a sweet sauce or a garlic soya sauce based one, here in Toronto Canada I have had it quite often in fact I went 2 weeks ago with some other former chef friends for lunch, it is crispy like Popeye's and very juicy.

Actually, that's not true. There's a lot of great chicken recipes in Korean food! Chicken are easy to raise, there's not a lot of land needed, so there's a lot of chicken dishes (and egg dishes) as well as beef and pork dishes.
There's "Sam-gyeh-tang", a chicken soup that's chicken stuffed with sticky rice, jujube, ginseng, and other goods.
There's also "Dak Bokkum", a spicy chicken stirfry that's like a stew, with chunks of squared potatoes and sliced carrots.

I don't know, but I don't see why you couldn't make some of those recipies with chicken instead of pork or beef. I love Korean BBQ sauce, I bet it would be yummy on chicken.
Edit - Now that I think about it, they're not having a bird flu problem there like the rest of Asia. Maybe they know something we don't?
