Properly cooked Salsify is good. A vegetable with a meat like taste! Parsnips are good too!
Aspargus is a must for Vegetarian Party..
Make a Tomato Aspic Cake ... contact Good Housekeeping magazine for recipe or go to your local library and look for the recipe in the Cookbook section! have plenty of dips! Also you can have chips that were cooked in shortening never lard... So avoid Pringles cause they use Lard! A&W also uses Lard!
to be sure make them yourself. Do the vegetarians you invite like false meats? If so make some... email me for the recipes if you don't have them!

Chips & Salsa. Now, how Vegetarian are these people? On the Vegan side, or on the I'm not "really" a vegetiarian because I eat eggs & Cheese ond other animal products, but not meat? Baba gounach is a great eggplant dip, but most recipies call for low fat yogurt. So that might be out...

BBQ'd tofu at room temperature. Get extra firm tofu (from Trader Joe's or else you are going to have to press the water out of it for hours) Fry on high heat in a nonstick pan with plenty of veg oil until golden, turn heat way down and add 2 Tablespoons of soy sauce per pound of tofu until it's all absorbed. Smother in BBQ sauce and grill to make the black grill marks. Be sure to do the soysauce step or the tofu will be too bland. Pre cooking in the frying pan makes it tougher so it won't crumble on the grill. Oil the grill to death before putting the tofu on it. Also, instead of BBQ sauce, make a glaze for the tofu by using apricot jelly/jam and some salt stirred together. Cook it on the grill just like the stuff with the BBQ sauce. I can easily eat 1/2 pound of tofu by myself, so plan to cook several pounds to share.
Both of these tofu "recipes" can be served at room temp. (heck, I eat it cold from the fridge, too)

Vegetarian Ribs would be good smoked of coarse, or a big jucy Vegetarian T-bone steak, or Vegetarian Shrimp and scallops wrapped with Vegatarian bacon.

If you kiss someone who eats meat, you might as well be eating meat yourself and that is GROSS, don't put that between love, I myself was once sick thinking I knew about love when I did not.

Here are a couple diff dishes you can make and serve room temperature:

Potato Tomato Corn & Basil Salad
*********************************************************************************

1 pound baby red potatoes, scrubbed
5 medium ears of corn (about 3 pounds)
1 pint grape tomatoes, halved lengthwise
1 small red onion, peeled and sliced thinly (about 1/2 to 3/4 cup)
1 large bunch fresh basil, rinsed, dried, and leaves picked
1/4 cup extra-virgin olive oil
2 large lemons, juiced
1 teaspoon kosher salt
About 15 grinds freshly ground pepper

Place the potatoes in a large pot of salted water and bring to boil.
Cook until just fork tender, about 15 minutes. Fish out the potatoeswith a spider or slotted spoon and place them in a bowl of ice cold water to stop them from cooking.

Cut each potato into quarters and place in a large bowl.

Shuck the corn and break each ear in half. Cook in the same boiling water for 5 to 7 minutes until tender but not soft. Remove the cooled potatoes to a dish-cloth to drain. Immerse corn in the same ice bath until cool. OR you can always use canned fresh corn kernels.

Remove corn from water and also let drain. Use a chef's knife to cut the kernels off each ear. Add kernels to bowl.

Add grape tomatoes, onion, and whole basil leaves. Add olive oil and lemon juice and toss gently to combine. Season, to taste, with salt and pepper. Serve immediately.
