I live in Haiti , so I I know what we eat ;
The main elements of the Haitian diet are corn, cassava, millet, rice and fruit. Tropical fruits such as pineapples, mangoes, oranges and grapefruit are plentiful. Haitian cooking, whether French or Creole, ranks with the best in the Caribbean. The Haitians are best known for their Creole dishes, which mix French, African and traditional Haitian elements.

Favourite dishes include :
grillot. This is made of fried marinated pork, served with a very spicy sauce called sauce ti malice. Sauce ti malice is made from lemons, sour oranges, hot peppers, salt and spices. Another popular Haitian dish is called lambi. Lambi is conch meat served grilled or boiled.
Grilled Goat is popular.

Barbecued chicken is onipresent.
Diri a djon djon, thats rice cooked in a black mushroom (Djon , Djon)
Tasso is also popular.
What is also good beef with okra.

On the costal areas , you can buy cheap lobsters and they will make a barbarcue fire on the spot.

Drinks:
Lots of fruit juices
The main beer is Prestige and their Rum is Barbancourt..
Tourists like Rum Punch, I prefer the 5 star , which can be drunk straight.
In PetionVille , where the foreigners and better hotels are, there are some good restaurants ,"Chez Albert", Plantation etc , but they serve up French dishes . Prices , about 12$ a dish.

I'm afraid David's Chicken Fufu, does not exist in Haiti.

Yes, Port-au-Prince is dangerous at the moment, but life goes on , and in the provinces , in towns like Jacmel, it's fairly safe.

A great dish is a tradtional Chicken Fufu, a braised dish with peppers, tomatos hot chilis, it is alot like Jambalaya.

Actually some the roots of Cajun and Creole food is based on the Carribean, and the foods the slaves brought to the America during that period.

There are some food sites that you can get recipes and on the East Coast there in a number of food stores to purchase the ingredients

Never been to Haiti but I've been to many Haitian restaurants. They have this dish called Grio (spelling??) which is deep fried pork pieces. It's sometimes served with this stuff called pickleese (spelling again??) which is sort of like a spicy, vinegared coleslaw or something. It sounds gross but it's sooo good.
