Not food from New Orleans thats creole food, its got to be cajun. I know most people dont like cajun cooking, I visited my aunt in Chicago and the food was good just not seasoned. It was all bland, but the pizza rocked!!!!!

People have been answering , but I am not seeing Boiled Crawfish!!! Ever tried its the best I wish the farmers here would farm year around so we could have it always, turtle in a sauce is good and fried alligator, gumbo... it could be 110 degrees here and we still eat gumbo everyday

Oh dear, I am Cajun from my Momma's side of the family, and Creole food is NOTHING like Cajun! I love it, and have taught my husband and kids to love it, too. Maque Choux, etouffe, gumbo, oh my!! Delicious stuff!

I've tried a lot of S. Cajun dishes I liked them all my favorites tho are Boudin with eggs an cush cush, dirty rice and red beans (semi-spicy) and jambalaya. There are some good Cajun Restaurants in N. Orleans if you look.

Needless to say, I am a proud coon a.ss and gumbo and boiled crawfish are the two main componets that make up my food pyramid. (well, when they are in season). But gar patties...oh man, I love living in SETX. You can't beat our food.

Orange-Bourbon Chicken

2 boneless, skinless Chicken breast
6 tablespoons Butter
1/2 teaspoon Salt
1/2 teaspoon Pepper
12 oz. Orange juice (frozen -concentrate), thawed
6 tablespoons Bourbon

Buttered Almonds
1/2 cup Almonds, slivered
2 teaspoons Butter
1/2 teaspoon Salt
1/2 teaspoon Black pepper

Preheat oven to 425 degrees F.
In large, heavy, oven-proof skillet melt butter; let cool, but do not let solidify. Turn chicken in butter to coat. Season chicken with salt and pepper. Tuck edges under, forming compact shape about 1 1/2 inches thick. Place chicken in skillet, skinned side up.

Bake at 425 degrees F, basting occasionally, for about 15 minutes, until meat thermometer registers 190 F. Remove chicken to warm serving plates; keep warm.

Saute almonds in butter until lightly toasted. Sprinkle with salt. Let cool to crisp.

Add orange juice concentrate to drippings in skillet; stir over high heat until reduced by 1/3. Stir in bourbon; heat through. Stir in remaining salt and pepper; pour sauce over chicken. Sprinkle with the almonds.

man i've had boiled mudbuggs (that's what we call crawfish in alabama)...sucking the head is awesome! i also love jumbalya
