INGREDIENTS:
1 pound beef neck bones
1 cup mixed vegetables
2 cups diced dill pickles
2 quarts water
2 cups diced potatoes
3 tablespoons all-purpose flour
1 cup milk
salt to taste

DIRECTIONS:
In a large pot, place neck bones, vegetables, and pickles. Add water. Cook over medium heat for 45 minutes.
Add potatoes; cook until soft, about 20 minutes.
Remove neck bones. Increase heat to medium-high. Combine flour and milk in a small bowl, and gradually stir into soup. Continue stirring until mixture boils. Season to taste with salt.

This is my grandma's recipe. I've never eaten it though, because I don't like pickles. I just got off the phone with her. I hope I wrote everything down right!!!! (We're not even polish, but she makes Polish Pickle Soup!)
Polish Pickle Soup
6C vegetable stock
1C milk
3T flour
1T ground flax seeds
4 large pickles, shredded
2/3C brine
4 cooked potatoes, cubed
In a large pot, bring vegetable stock to a boil. Reduce to a simmer. In a small saucepan over low heat, gently heat milk and whisk in flour. When combined, pour into vegetable stock. Use whisk to mix well and break any flour lumps. To get the rest of the milk-flour mixture in the small pan, dip a little of the stock from the large pot and put it into the stock pot.
Whisk in the flask seeds, then add pickles and brine. Simmer 5 minutes. Add cooked potatoes. Add milk or sour cream if soup is too tart.

1/2 cup pickle juice, from the pickle jar
2 1/2 cups boiled sliced potatoes
2 tablespoons instant flour
1 cup milk
1 egg
2 tablespoons soft butter
Garnish
chopped fresh dill
sour cream
salt and pepper

In a large saucepan or soup pot with cover, combine stock, pickles, pickle liquid & potatoes. Bring to a boil, reduce heat and cook covered, over low heat, til potatoes start to get soft (about 10 minutes).
Combine flour and milk, add to broth, bring to a boil and remove from heat.
Combine egg and butter and stir into broth.
Return pot to the stove and heat through without boiling. Season with salt and pepper. Garnish with sour cream and or dill.

padget2002 recipe #1...that's how my mom does it...sour cream optional...and for those who have never tried it....it's great. it's not a thick soup like americans are used to...it's morer brothy but has lots of flavor...great with a piece of rye bread.
