If you have some Marmite (sandwich spread)availabie .It is vegetairian and the taste would be similar to soy sauce .You can adjust the saltiness by adding more or less water.

Ponzu Sauce. It is like a citrusy soy sauce. I use it instead of soy almost all the time now!

Go to your local Asian grocery and wander around; if you can't read the labels there's usually someone around who can help. There are also flavoured soy sauces like mushroom, etc.

You can get gluten free soy if that's the issue, or try this recipe.
4 tablespoons beef bouillon
4 teaspoons balsamic vinegar
2 teaspoons dark molasses
1/4 teaspoon ground ginger
1 pinch white pepper
1 pinch garlic powder
1 1/2 cups water

Try Up Country Organics of Vermont's Mandarin Sesame Dressing. You can use it on tofu and/or veggies, and if you use it on seitan(wheat meat) you have an excellent veggie alternative to sesame chicken. It's great on tempeh, too.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
