Haggis is a traditional Scottish dish. Although there are many recipes, it is normally made with the following ingredients: sheep's 'pluck' (heart, liver, and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally boiled in the animal's stomach for approximately an hour. It somewhat resembles stuffed intestines (pig intestines otherwise known as chitterlings), sausages and savoury puddings of which it is among the largest types.

A national dish of Scotland, composed of a forcemeat of the heart, liver and lungs of a sheep mixed with oatmeal, well seasoned and put into bags made from the paunch of the sheep. The haggis is then boiled for 2-3 hours and left to get cold. When required for use it is simmered again for about an hour and is traditionally served with mashed turnips, potatoes and whisky.

also This Scottish specialty is made by stuffing a sheep`s (or other animal's) stomach lining with a minced mixture of the animal`s organs (heart, liver, lungs, and so on), onion, suet, oatmeal and seasonings, then simmering the sausage in water for about 4 hours. Haggamuggie is a simplified version of haggis made with fish liver.

Most modern commercial haggis is prepared in a casing rather than an actual stomach. There are also meat-free recipes specifically for vegetarians which supposedly taste similar to the meat-based recipes.

I was almost tricked into eating this when I lived in London. It is the fat lining of a sheep's stomach which is stuffed with meat or something. It was scary to look at and even scarier to think I almost ate it!
