Well, I'm with you. My family, up to sixth cousins both sides, is from the Philadelphia area, and none of us had ever been South.
We didn't know what chitlins were, and believe me, once I found out, I didn't want to know and neither do you.
Just a word to the wise--refuse them politely, no matter how enthusiastically they're offered!!!

Chitterlings, or chittlins are pork intestines that are cleaned and I believe seasoned then boiled or fried. My mother and father enjoyed eating them. I myself did not find them to be appealing. Maybe it is the stigmatisms associated with the eating of intestines.

Chittlins are pig intestines that are most commonly eatin by my black family....They smell and look disgusting but some of them love them I wouldnt try them thou

Chitterlings are pig intestines. This is food from slavery. Slaves were given the scrapes and handled the farm animals and made the best of what they had.

You can call them chitterlins, or chitlins.
(Chittlins are children)
But chitlins (chitterlings) are fried pork guts.
