First choose a dried stuffing mix, eg sage and onion. (1 pint of water size)chop and fry a couple of onions, 2 sticks of celery, some chopped peppers together till softened but not cooked. Run some nuts through food processor, or use a good dollop of crunchy peanut butter. grate 6oz of a tasty cheese. beat together two eggs. Make up stuffing mix as per pack, before it has thickened stir in the other ingredients. Press into greased 2lb loaf tin, and bake for approx 1 hour in medium oven.
Make a gravy using any veg stock you like, try adding to it some smooth peanut butter, or redcurrant jelly.

Of course vegetables but use colour to decide which ones - if you're roasting try a selection of root eg turnip parsnip carrot, and also a selection of softer roast veg- red onion peppers (not green) courgettes, the two types roasted separately then combined on the plate give colour and texture. Don't forget roast potatoes and something that all people like but don't often get unless with meat - yorkshire puds. Full use of the oven and yummy. Gravy is easy - slow fry thinly sliced onions then add stock Tomato puree, soy sauce, worcester sauce and mustard, herbs if you have them, then when you're happy with flavour thicken with a little corn flour. And no need for a meat substitute!

Simply make a nut roast. Cashews are the most tasty nuts to use but are more expensive.
Brown onions. Add garlic to taste. Add sota sauce, part cooked sliced carrot, bread crumbs, cashews (which have been whizzed in a processor). If not for a vegan, add egg to bind and get right consistency.
Cook for one hour in moderate oven.
Serve with roasted root vegetables and some nice fresh greens.

Linda Macartney does some good vegi pies that are good with a roast.
I would sugest that or make an onion and goats cheese tart.
Other people have sugested stuffed peppers but they really dont go well with gravy!
Or theres always nutloaf but most vegis dont like it.

Potatoes, carrots, ,cauliflower, turnips, yams and rutabagoes. Basically any nice and hardy root vegetable. Barley is also good, cause it soaks up any gravy you may make, but it needs a tons of water. Also try some seitan in there.

pork or beef roast, cubed potatoes, sliced carrots, sliced celery if you like that stuff, a little rosemary, thyme if using pork, garlic powder, onion powder and pepper. Slow cooker for 6 hours or in oven 350 degrees 4 hours.
